At Dartigalongue, Ghislain Laffargue oversees the ageing, and Benoit Hillion, director and representative of the sixth generation, is involved in every decision relating to it. This 1993 vintage has therefore been guided by this duo since 2010. On the nose, sandalwood and golden tobacco. The attack is powerful: the tannins unfold generously, then the finish glides towards caramel and tarte tatin. This after-dinner note calls, naturally, for an apple dessert.
