For their Hors d'âge, the Dèche family draws on their finest eau-de-vie, matured for between fifteen and twenty-five years in oak casks in the Eauze cellar. The colour is mahogany gold. The nose is rich, opening on dried fruits and cooked prune; the palate is complex and velvety, with roasted hazelnut well to the fore, and the finish has real substance and a very fine length.
