Un-Oaked has never seen a cask: the spirit drawn straight from the still matures quietly in stainless-steel tanks, its strength reduced gradually. The nose is subtle, offering pear, apple and white blossom; the palate is broad and generous with a silky texture, and the finish lingers on sweet almond. Serve neat, over ice, lengthened with tonic, or in a cocktail. 43% vol.
